What’s for dinner? Peanut Butter Roasted Eggplant + Sesame Noodles! This recipe is incredibly simple to make, packed full of flavor and will easily impress family or friends. Give it a try!
Makes 2 servings
▪️1 eggplant sliced in half
▪️1 tsp miso paste (brown rice miso)
▪️1.5 tsp tamari sauce
▪️1.5 tsp maple syrup
▪️1 tsp peanut butter
▪️1 tsp water
▪️1 cup rice noodles
How to Make It
1️. Pre-heat your oven to 400F
2️. Slice the eggplant in half. Optional: char in a griddle pan for a few minutes (flesh side down).
3️. Prepare the glaze by adding the miso, tamari, maple syrup, peanut butter and water to a small mixing bowl. Whisk until smooth.
4️. Now, cut crisscross lines across the eggplant flesh. This helps to get the flavor deeper into the eggplant.
5️. Place the eggplant halves onto a baking tray and evenly cover with the glaze before placing in the oven for 25 minutes.
6️. Boil rice noodles. Drain them and add them to pan with a drizzle of sesame oil and squeeze of lime juice. Fry for 2-3 minutes.
